Vegetable Fried Rice

What do you do with your left over rice?

Please do not tell me you throw it in the garbage. Not when it is the perfect start to some delicious Vegetable Fried Rice.

 

 

For those of you who don’t like to spend too much time in the kitchen, guess what? This is a complete meal in one pot. It is quick and easy and provides all the carbohydrates, proteins and fats needed to maintain good health. The vegetables add the necessary vitamins and minerals to this nutritious meal.

 

What do you need…

Well one obvious ingredient is rice…….preferably leftover rice.

 

 

If you haven’t got any leftover rice and still have a craving for Vegetable Fried Rice, don’t despair. You can just go right ahead and cook some rice.  It doesn’t take long.

 

You will also need vegetables.

 

carrots, broccoli, cauliflower

 

Feel absolutely free to use any vegetables you desire………as a matter of fact, if you want to make the job even easier, jut grab a pack of frozen, mixed vegetables.

 

 

I also like to add some peas to my stir-fry for added protein.

 

Next you will need some seasoning.

 

Onion, scallion, garlic, soy sauce.

Salt and pepper to taste, oil for sauteing and you are good to go.

If you are adventurous and can handle spicy hot foods you may chop up a scotch bonnet pepper and add to the mix.

Please, please do not add the pepper seeds.  Just use the flesh of the pepper.  After all, you want to enjoy the meal. You certainly don’t want to spend all the time dousing the fire in your mouth.

 

By the way, there is no egg in this recipe so this meal is great for vegans.

 

Recipe

  • 2 cups cooked rice
  • 2 cups chopped vegetables (e.g. carrots, broccoli, cauliflower, corn, string beans, mushroom……)
  • 1/2 cup peas
  • 1 large onion – chopped
  • 3 cloves garlic – finely chopped
  • 2 stalks scallion – chopped
  • 1 small scotch bonnet pepper (optional)
  • 1 Tbsp soy sauce
  • 1 Tbsp oil for sauteing
  • Salt to taste

 

Direction

In a large saucepan, heat 1 tbsp oil.

Add the chopped onions and sautee for 1 minute.

Next add the finely chopped garlic and sautee and additional 1 minute.

Add the chopped pepper (optional)

Add the vegetables and toss well until they are tender.

Add the 2 cups of rice and stir until rice is coated with the oil and mixed with the vegetables.

Pour in the soy sauce and mix well.

Continue mixing for about 2 minutes until all the rice is completely combined with the other ingredients.

Add salt to taste.

 

Serve immediately.

 

It takes only minutes to make

This is one of the easiest, quickest meals that I have ever prepared.

Give it a try.

You can have it for dinner, you can have it for lunch……….hey, you can even have it for breakfast. Why not.
