Pumpkin Punch – Simple and Delicious

Oh the great pumpkin.

No I am not talking about carving for halloween.  I am talking about the pumpkin that features often in a vegetarian diet and can be used to make simple, delicious Pumpkin punch.

The many uses of pumpkin

Pumpkin can be used in so many ways……..(No.  I am still not talking about jack-o-lanterns and other carvings.)

Pumpkin pie, Pumpkin butter, Pumpkin face mask (beauty treatment), Pumpkin soups, Pumpkin bread, plain cooked Pumpkin for eating………..

Yes. so many ways to use it.

But my favourite way to use pumpkin is to drink it.

You heard right. That is my favorite method of ingesting this bright yellow, nutrient packed, super-food. When you can drink your food, it is so easy to get the nutrients your body needs to function optimally.

So how do I drink my pumpkin?……………

Simple. I make pumpkin punch.

It is delicious, can be made in 3 minutes and has only 3 ingredients.

It’s amazing that something with only 3 ingredients can be so delicious (well maybe 4 ingredients if you count the water).

What’s the big deal with pumpkin anyway?

It tastes great and has lots of Health Benefits.  That’s a big deal, wouldn’t you say?

Pumpkin is loaded with vitamins and minerals and is also rich in dietary fiber and anti-oxidants. Pumpkins boast the antioxidant beta-carotene, which may reduce cancer risk according to the National Cancer Institute.

One cup of cooked, mashed pumpkin contains more than 200 % of your recommended daily intake of Vitamin A, which helps to keep eyesight sharp and helps people suffering from night blindness.  As a matter of fact there are quite a number of eye health benefits from eating this food.

Pumpkin is truly a storehouse of many anti-oxidant vitamins and in addition to vitamin-A,  contains also vitamin-C and vitamin-E. The carotenoids in pumpkin also help to keep skin wrinkle-free.

Anyway let me hurry and tell you how I make it so that you too can enjoy this delicious glass of health.

 

So simple to make

This might very well be the easiest pumpkin punch you will ever make.

The only ingredients are pumpkin, peanut butter, sugar, water

Let’s get on with it then.

 

Ingredients:

1 cup cooked pumpkin

2tbsp peanut butter

2 tbsp sugar (more or less according to taste)

2 cups water

Directions

Place all ingredients in blender and blend for about 30 seconds.

 

I bet you are looking for more instructions.

Well there are no more.  That’s all there is to it.

Well the only thing is that you might blend for less that 30 seconds or more than 30 seconds depending on the type of blender you have.  I use the Nutribullet.

Ah……my faithful Nutribullet… serving me so well.  Almost daily churning out juices, punches, smoothies, grinding flaxseed, making oat flour………If my Nutribullet could talk it would say “Give me a break,…… please”

I am getting carried away. I could ramble on and on about my bullet but that’s another subject for another time.

Back to the pumpkin punch.

For variation in taste, feel free to add your favorite spices and flavors.

You may also use your choice of milk instead of the peanut butter.

 

This recipe makes about 3 servings.  I usually make it for myself and my husband but I must admit that many times I drink off the entire 3 servings before my husband even makes it into the kitchen.

 

I will try real hard to be kinder to him next time but, but….
