One pita bread cut in half, opened and spread with hummus of your choice.

Go ahead and toss in all those ingredients again….hummus spread, tomato, bell peppers and lettuce.

This time try some chickpeas instead of the black beans and if you have adventurous taste buds that can stand a bit of spiciness, chop up a bit of scotch bonnet pepper and mix it right in.

Roll that healthy goodness up and there you have it….another healthy, delicious, quick and easy lunch.

Banana Sandwich

I bet you never thought of this super easy, super quick, vegetarian lunch.

It’s as simple as it sounds.

Bread, peanut butter, banana.

Just spread your bread with peanut butter, add sliced banana and sprinkle with sesame seed for extra nutrition.

Drizzle on a little honey if you wish.

You can also put this in your frying pan or your toaster and grill the sandwich. It’s totally up to you

Carbohydrates, proteins, fats, vitamins and minerals………..it’s all there.

Banana Mayo Sandwich

It’s very similar to the Banana sandwich except that you substitute mayo for the peanut butter.

Tomato Sandwich

This is almost too easy for words.

Bread……spread with mayo….and one thick, juicy slice of tomato.

How easy is that?

It’s so nice, you’ll want to do it twice……

So go ahead, make two and enjoy.

You know what? This tomato sandwich can transform into many different types of sandwiches by adding and switching around one ingredient.


For example, to the tomato sandwich, add sliced, fried tofu………….or you can change and add scrambled tofu. This makes a really delicious, nutritious sandwich.


For those who are not vegan, cheese is a lovely addition to the tomato sandwich. Add some lettuce also and you are good to go.


Another option for the non-vegan. Fried egg or sliced boiled egg……..any way you like it………with the tomato and lettuce. That’s one yummy sandwich.

Vegetable Fried Rice

Don’t for a second think that all easy vegetarian lunches have to be sandwiches. Not at all.

Another quick, easy lunch is vegetable fried rice.

Gather your left over rice, left over veggies or grab a pack of mixed veggies from the freezer.

Next fetch the onion, garlic and add some peas to increase the protein content and there you have the makings of another delicious, nutritious and filling vegetarian lunch.


Fruit Salad

How about switching up the routine and going for a fruit salad for lunch.

No need to limit yourself. Just cut up fruits of your choice and combine them in a bowl.

Add some chopped nuts such as almond, walnut, pecans and some seeds such as sunflower seed and sesame seed.

Hmmm…… Refreshing………..Your body will just love you for this.


Mac and Cheese

This is a childhood favourite but enjoyed by both children and adults alike.

There is a very, very easy version that even a seven-year old can make.

But you can make an even healthier version by adding some peas and carrots to the macaroni. Also in your sauce that you make, you can add some pureed vegetables such as cauliflower and zucchini.

Can you just taste this warm, delicious, creamy wonder…………..along with what you picked up at the salad bar of course. Remember, we are not leaving out our salads. They are good for us.


Egg and Plaintain Sandwich

This one is a Caribbean favourite consisting of fried ripe plantain and egg.

This is ideal for those of you who have a sweet tooth as the plantain provides a lovely sweet taste to balance the egg.

It is usually had as a breakfast meal but it tastes so good that you will want to eat it at any time during the day.

The plantains should be ripe but try to avoid the overripe ones as these become extra soft and soggy when fried.

This is quick, easy and tastes great.



Yes soups.

They are a warm and filling pick me up for the middle of the day. And if you like cold soup, that’s fine too.

Lentil Soup

This is a quick soup because lentils cook in a very short time especially if you soak them before.

If you want the meal to be prepared even quicker, use precooked lentils.

To your boiling water and lentils, add potatoes, pumpkin, sweet potatoes and carrots. Cut these into small pieces so they will cook quickly.

Add your seasoning; onion, scallion, thyme, pepper and salt to taste

Simmer until cooked, stirring frequently so soup will become thickened.

This is a wholesome, delicious and filling lunch.


Vegetable Noodle Soup

Another easy to prepare option.

All you need for this meal……………..

Frozen vegetables, onion, garlic, vegetable stock or cube, salt and pepper to taste and noodles (or you may use spaghetti).

Cook these up for a warm, satisfying lunch for any day and any weather.


Don’t stop at just these two options. Be adventurous. Feel free to experiment with different types of soup.
